My Ode to Cinco de Mayo

My husband’s job is having a salsa contest tomorrow (why the day after Cinco de Mayo remains a mystery to me) so of course, I was volunteered to make some homemade salsa for his team (as a manager, he needed to make sure they came through). I was actually happy to do it. I’ve been feeling super domestic lately. Below is the recipe I came up with. It just came together in my head after researching some recipes on line. At first after mixing all the ingredients and tasting the salsa, I was worried. The taste was ok, pleasant and fresh but something was missing. So I added the cumin. Better but I was still worried. After going to bed and sleeping on it, I tasted the salsa again today and muy beuno. It tastes so good that I had to share my recipe. Enjoy. It is really simple and really yummy!

Fancy Shortcut Salsa

Ingredients:

1 can original Rotel
1 tub store bought pico de gallo
2 to 3 tablespoons cilantro, chopped
1/2 small white onion, chopped
2 roasted red peppers, chopped
2 large cloves garlic, minced
1 teaspoon Tony Chachere’s
1 teaspoon ground cumin
1 tablespoon olive oil
Juice of half a lime
Sea Salt to taste

In a large glass bowl, combine all ingredients. Stir well. Cover with plastic wrap and chill overnight before serving (flavors need to meld together).
