I decided to make a sweet and savory crostini. A few nights ago I had a dream about my time in the Domincan Replublic when I thoroughly enjoyed Guava preserves at the breakfast buffet and deiced to search for some. My local store had a blend of mango, guava and passion fruit preserves so I bought it. It was so yummy and really took me back to the Caribbean. This was also my inspiration for the crostini. I thought goat cheese and bacon would help balance the sweetness and boy was I right. This was incredible. I would make it again every night if I had the time or the metabolism, ha!
That’s about it as far as planning. Prep time took about 30 minutes for the food and once we were done, we sat down on the couch, put our feet up, toasted to a fun evening and chowed down. It was one of the easiest informal get-togethers I’ve had and you can certainly replicate it. Think, Game of Thrones Viewing Party. I can’t wait until GOT comes back on Sunday. It’s been forever… But I digress. It’s time for the fun part, friends. Here’s how I made the Crostini.
Here’s a quick recipe rundown:
Bacon, Guava and Goat Cheese Crostini
(serves 2 to 3 hungry gals)
Ingredients:
1 Baguette, sliced 1/4 inch thick (mine made about 24 slices)
8 oz Goat Cheese Crumbles
1/2 c Guava Preserves (Apricot would work well too)
5 – 6 slices bacon
Directions:
Preheat oven to 350 degrees.
Arrange baguette slices on baking sheet.
Drizzle with olive oil.
Toast until golden, about 15 minutes.
Let cool on baking sheets.
Top crostini with goat cheese, then preserves, then bacon.
Serve and enjoy!
