How to Host a Viewing Party for Two on the Fly

One of my besties (Joy from Basically Joy) had a brilliant idea to have an impromptu viewing party for the season premiere of The Real Housewives of Orange County.  I agreed and said I’ll host at my place.  So we developed a game plan that I wanted to share with you along with a special recipe.
We knew we needed a signature cocktail.  This was our first priority.  So we decided to have some Pina Colada Margaritas (it was #NationalPinaColadaDay).  Next up was deciding on the food.  Since it was just us two, small bites was the way to go.  Joy made some yummy Nutella Raspberry Dip and the most amazing Cheddar Bacon Ranch Pull Apart Bread.  An lucky for you, she shared the Bread recipe here.  It was like crack.  I’m guessing.  I’ve never tried crack but I’ve heard it’s pretty addictive. 


I decided to make a sweet and savory crostini.  A few nights ago I had a dream about my time in the Domincan Replublic when I thoroughly enjoyed Guava preserves at the breakfast buffet and deiced to search for some.  My local store had a blend of mango, guava and passion fruit preserves so I bought it.  It was so yummy and really took me back to the Caribbean.  This was also my inspiration for the crostini.  I thought goat cheese and bacon would help balance the sweetness and boy was I right.  This was incredible.  I would make it again every night if I had the time or the metabolism, ha!

That’s about it as far as planning. Prep time took about 30 minutes for the food and once we were done, we sat down on the couch, put our feet up, toasted to a fun evening and chowed down. It was one of the easiest informal get-togethers I’ve had and you can certainly replicate it. Think, Game of Thrones Viewing Party. I can’t wait until GOT comes back on Sunday. It’s been forever… But I digress. It’s time for the fun part, friends. Here’s how I made the Crostini. 

This only has five ingredients.  In true form, I forgot to include one of them in this shot but it’s easy enough – just olive oil.  
Fry or bake your bacon until pretty crispy.  You want it to break apart easily and not be chewy or rubbery textured.  Slice the baguette with a serrated knife.
Drizzle with olive oil and toast until warm and crusty. 
Top with goat cheese.  I ended up smearing it because I though it worked better with the other toppings, however you can keep it in crumbles if you like.
Top with preserves and then top with your cooked bacon pieces.
This was seriously and delightfully delicious.  We barely had any leftover.  It was the perfect bite (or two if you have more manners than I do).  It also paired well with the pina colada margaritas.  I will make these yummy appetizers again for the next adult party I host, which will perhaps be for my birthday in about a month.  

Here’s a quick recipe rundown:
Bacon, Guava and Goat Cheese Crostini
(serves 2 to 3 hungry gals)

Ingredients:
1 Baguette, sliced 1/4 inch thick (mine made about 24 slices)

Olive oil (for drizzling)
8 oz Goat Cheese Crumbles
1/2 c Guava Preserves (Apricot would work well too)
5 – 6 slices bacon

Directions:
Preheat oven to 350 degrees.  
Arrange baguette slices on baking sheet.
Drizzle with olive oil.
Toast until golden, about 15 minutes.
Let cool on baking sheets. 
Top crostini with goat cheese, then preserves, then bacon.
Serve and enjoy!
