Last week I bought some puff pastry in the hopes of recreating my middle school pizza pockets.  Lo and behold, when I was finally inspired to get down in the kitchen, I found I was out of mozzarella cheese.  This is after I already set my puff pastry sheet out to thaw.  Fail!  So I had to think quick on my toes and figure out what to do with my pastry so it wouldn’t go to waste.

I thought about making something with eggs and then remembered, I ran out of eggs and egg substitute.  What am I good for???  Ha!  Then I thought, what about something with Nutella (or off brand Hazelnut Spread in my case).  At first, I thought about making spirals but then you have to refrigerator them so they slice better and I didn’t have the patience for all that.  So I decided to just plop some Nutella down on a square of pastry dough, pinch it up and see how that turned out.  Before I started baking, I got on Pinterest to see if there were similar desserts.  Of course, there was and I ran across this one.  I swiftly added it to my Nutella Board and referenced it for info on bake times and such.  I liked that they didn’t use an egg wash (remember, I didn’t have any eggs) and it was easy.  So I decided sharing this recipe belonged under a “Saw it on Pinterest Post”. Gotta give credit where is due.

Here’s how this simple dessert went down.  Thaw your puff pastry for at least 30 minutes.  Cut the sheet into squares.  I used a pizza cuter on a silicone pastry mat – no flour needed.  Scoop a teaspoonful of the spread in the center of a pastry square and then pinch up all the sides.

Place in a muffin pan and bake at 350° for 20 minutes.  Depends on our oven.  I could have let mine go a bit longer to get more golden and crispy but I was hungry and they looked too yummy!  Sprinkle with powdered sugar, if desired.  Of course, I desired.

Sorry for the phone pics.  I did grab the good camera eventually.  I also wanted to note that my five year old son loved these.  They make a great little sweet snack.  Here is a link to the silicone mat.  I love it! It also has circles for measuring out pie crusts.  I mean, I don’t just make homemade pie crusts all the time, but sometimes it’s fun to bake from scratch, just sayin’!

Ingredients:
1 sheet puff pastry
1/2 jar Hazelnut Spread (Nutella)
Powdered sugar for dusting

Instructions:
Preheat oven to 350 degrees.
Thaw pastry.
Cut into 9 squares.
On silicone pastry mat or floured surface, drop about a tsp of spread in the center of pastry square.
Pinch up all the sided until a ball is formed.
Place into lightly greased muffin tin (I used coconut oil cooking spray to lightly coat the tin).
Bake 20 minutes or until slightly golden.
Remove from sheet, sprinkle with powdered sugar and serve.
